I love experimenting with Cabernet Franc to bring out the best of the grape. It’s a favourite of mine and the only grape which I grow on my estate. With one great grape, I create four different wines, each one as crazy as the next. From concrete tanks to wooden barrels, eggs and amphora, all four of my wines follow the same organic and biodynamic route. I trample my grapes then the whole bunches undergo carbonic maceration in earthenware vinegar jars. Nothing is added to my wines or the vines. In their rocky store, my amphora and wooden barrels are in touch with the land and the land is in touch with my wine.
